Easy one pot Nigerian fried rice

Easy one-pot Nigerian fried rice is another Nigerian fried rice recipe. It is quick, easy and has few steps while ensuring the rice doesn’t get overcooked or clump together. It is delightfully appetizing and you can reduce the amount of oil that goes in without much harm done to the dish.  I learnt this method when I ‘interned’ at a fast food restaurant.

Other vegetables and proteins of your choice can be added, but do not overladen the fried rice with them. A common addition is chopped green beans (french beans), which go into the pot with the carrots. Shredded cabbage can be added right at the end so it retains some of its crunchiness and sweetness. You can add fried diced liver, frying the liver helps prevent the fried rice from spoiling quickly.  Other add-ons include shredded cooked chicken, beef or pork, and even diced cooked hotdogs or sausages. Shrimps and prawns are also really delish with the Nigerian fried rice.

To get your fried rice to be really yellow, use turmeric because the amount of curry powder you will need to get that sunny yellow colour will be so much, making the taste overbearing.

You can also try cooking the Nigerian fried rice, Nigerian stir-fried rice and the basic Chinese fried rice.

To prepare easy one-pot Nigerian fried rice:

2 cups rice
4 cups water
2 teaspoon curry powder 
1 1/2 teaspoons dried thyme
3 seasoning cubes
1 bay leaf
1/2 cup chopped onions
1 teaspoon crushed garlic
1/2 - 1 teaspoon turmeric 
salt 
chili pepper 
1 chopped scotch bonnet
1/4 cup vegetable oil 
1/2 cup diced carrot
1/4 cup fresh peas
1/4 cup diced green bell pepper
1/4 cup chopped spring onions (scallions)
1/2 cup sweet corn

Wash, season and boil meat. Strain stock through a fine sieve and set aside.

Wash rice well in several changing of water till water is almost clear.

In a pot, put water and stock over high heat, add curry, thyme, seasoning cubes, bay leaf, onions, garlic, turmeric, salt, chilli pepper, scotch bonnet and vegetable oil.

Bring to a boil, add washed rice. Stir, cover and cook for 5 minutes. Reduce heat to low until almost done.

Make a well in the middle of the rice, place carrots and peas, pile the rice over the vegetables to cover them.

Cover and cook till rice is done. Add green pepper, sweet corn and spring onions. Cover, take off the heat and leave to stand for about 2 minutes. Stir to mix.

Enjoy your Nigerian fried rice with a cold drink. Here it is served with cheat barbecue turkey wings.

*To use frozen vegetables, place a dry frying pan over very high heat. Add some vegetable oil, when it is very hot, add your frozen vegetables, do not thaw. Stir for about 1 minute, till it has heated through. Take off the heat and stir into already cooked fried rice.
