Egusi Jollof Rice using leftovers

Egusi Jollof rice is a dish I make very often. It is simple, scrumptious, convenient, inviting, quick and easy to make. It is made with leftover rice and Egusi soup.

Egusi soup is one of the universal soups we have in Nigeria. There are so many ways to prepare it, Egusi Soup with Tomato Sauce, Fried Egusi Soup, Lumpy Egusi Soup etc. Each will be good for Egusi Jollof rice.

Spicy Egusi jollof rice

Egusi soup is mostly eaten with a form of ‘swallow‘ in Nigeria but most of my children will rather eat theirs with rice than with swallow of any type. So when Egusi soup is on the menu, there will be both white rice and swallow as accompaniments.

This dish was born out of convenience and a belief in waste-not-want-not.

To prepare Egusi Jollof Rice

Egusi soup
Cooked rice
Seasoning cube
Crayfish
Salt

Place your leftover rice in a pot.

Egusi soup and white rice

Add Egusi soup, seasoning cube, a little ground crayfish and salt.

Add 1-2 tablespoons water and stir.

Cover and steam on medium-low heat until dry. Taste and correct seasoning.

  • The amount of seasoning, crayfish and salt you use, depends on the taste of your egusi soup.

  • Place your leftover rice in a pot.
  • Add Egusi soup, seasoning cube, a little ground crayfish and salt.

  • Cover and steam on medium-low heat until dry. Taste and correct seasoning.
