Twice cooked potatoes

Irish potatoes are one of my favourite things to eat. I love the whole gamut of French fries, Mashed potatoes, Spanish omelette, Shepherd’s pie, Potato pancakes, Delicious Soft Potato bread etc, but plain boiled potatoes? not so much. In comes Twice cooked potatoes, for want of a better name. It is boiled then deep-fried or boiled then grilled or baked if you don’t want too much oil.

This is a basic recipe, herbs and spices can be added to the cooking water or sprinkled on the boiled potato before grilling. Just put into consideration the sauce you are serving it with when choosing the herbs and spices.

To make twice-cooked potatoes

350g Irish potatoes
2 cups water
1 teaspoon salt
oil for deep frying

Peel and cut potatoes into large chunks.

Put in a pot, add water and salt, place over high heat to boil.

Boil until a fork can just pass through.

It still needs to be quite firm and this can take up to 10 minutes.

Once the water boils, start checking so you don’t overcook the potatoes.

If the potatoes are overcooked, they will break up when being fried.

Drain into a sieve and set aside.

Deep-fried

Fill a large frying pan with oil and place over medium-high heat, when hot, add potatoes but do not overcrowd the oil.

Fry until they are golden brown.

Drain on paper napkins.

Grilled

Put potatoes on a baking tray, do not overcrowd, drizzle oil all over, making sure to coat all the potatoes.

Place under the grill and grill until golden brown.

Baked

Set oven at 230 deg. C put potatoes on a baking tray, do not overcrowd, drizzle oil all over, making sure to coat all the potatoes.

Place in the oven and bake for 30-35 minutes until golden brown.

Notes

  • Season the boiled potatoes with black pepper and crushed dry rosemary before grilling or baking for added flavour.

Serve with a sauce of your choice, eg Green pepper sauce, Beef liver sauce, ketchup, Tomato Stew, Spicy mayonnaise, Nigerian tomato sauce, mackerel tomato sauce etc.
