Shawarma Spice Mix-Homemade Middle Eastern Shawarma spice

Shawarma spice mix like practically all spice mixes varies from person to person. Usually, there are certain ingredients that are always present. This recipe is loaded with flavour and it is what I mostly use for my Easy Homemade Shawarma (Middle Eastern/ Nigerian).

You can use this spice mix in any other meat dish, in sauces and curry. Use it anytime you want to add a Middle Eastern flavour to your dish. Try adding it to your meat pie or steak and kidney pie.

Cinnamon stick, cumin seed, Cardamom pods, Cloves, Coriander seeds, Turmeric Powder

You can buy all the ingredients from big department stores, in Nigeria, I buy mine from the Hausa spice sellers in the open market or on Konga.com. The price is much lower and they sell in smaller packages.

I have tried to give the Hausa or Arabic name for the ingredients.

To make Shawarma Spice Mix-Homemade Middle Eastern Shawarma spice

2 tablespoons Coriander seed (Gunyen Gantu) 
1 Cinnamon stick (Kirfa) 
1 tablespoon Cumin seed (Kammun) 
1 teaspoon Cloves (Kanamfari) 
1 teaspoon Tumeric Powder (Kurkur) 
1 tablespoon Cardamom pods (Huba alhal or Abbahaan) 
1 teaspoon dry thyme

Toast spices lightly (about half a minute) in a dry frying pan over medium heat to dry out.

Toasting will remove excess moisture from your spices so that your mix will stay fresh and last longer.

Using a coffee grinder or the dry mill of your blender, grind until powdered.

Sift and re-grind what is left behind.

Authentic Middle Eastern Shawarma spice mix

Pour into an airtight container, store in a cool place. If the weather is hot, store in the fridge.

It will make about four Tablespoons of Spice powder.
