Healthy vegetable rice

This vegetable rice is made with white rice and shredded vegetables (coleslaw).

Ingredients
  

  • 2 cups cooked rice
  • 2 tablespoons vegetabe oil
  • onions
  • carrot
  • cabbage
  • salt (optional)

Instructions
 

  • Finely chop onion and cabbage, grate the carrot.
  • Put vegetable oil in a frying pan over medium heat.
  • When hot, add chopped onions and shredded carrot, stir.
  • Cook until both have softened, do not allow to colour.
  • Add cabbage and salt, stir well. (Don't add salt if you used salt to cook your rice).
  • Cook until cabbage is soft.
  • Pour in rice and stir to coat well with the vegetables.
  • Cook for 2-3 minutes and take off the heat.

Notes

  • Serve with stew, sauce, soup etc.
