Egusi Jollof rice is made with leftover rice and Egusi soup. It is simple, convenient, quick and easy to make.

Ingredients
  

  • Egusi soup
  • Cooked rice
  • Seasoning cube
  • Crayfish
  • Salt

Instructions
 

  • Place your leftover rice in a pot.
  • Add Egusi soup, seasoning cube, a little ground crayfish and salt.
  • Add 1-2 tablespoons water and stir.
  • Cover and steam on medium-low heat until dry. Taste and correct seasoning.

Notes

  • The amount of seasoning, crayfish and salt you use, depends on the taste of your egusi soup.
