  • 1 Cinnamon stick (Kirfa)
  • 1 tablespoon Cumin seed (Kammun)
  • 1 teaspoon Cloves (Kanamfari)
  • 1 teaspoon Tumeric Powder (Kurkur)
  • 1 tablespoon Cardamom pods (Huba alhal or Abbahaan)
  • 1 teaspoon dry thyme

Instructions

  • Toast spices lightly (about half a minute) in a dry frying pan over medium heat to dry out.
  • Using a coffee grinder or the dry mill of your blender, grind until powdered.
  • Sift and re-grind what is left behind.
  • Pour into an airtight container, store in a cool place. If the weather is hot, store in the fridge.

Notes

  • Toasting will remove excess moisture from your spices so that your mix will stay fresh and last longer.
  • This recipe will make about four tablespoons of Spice powder.
