Take your usual fried turkey wings a notch higher…strike that, several notches higher slathering it with this simple but awesome homemade barbecue sauce. Be it at the dinner table, Christmas party, on game night, time out with friends, everyone will thank you for this fried barbecued turkey wing. They are spicy, tender, sweet and sticky, everything you want in a barbecue.
The turkey wings can be fried or grilled. This simple barbecue sauce with so few ingredients is surprisingly very flavourful. It is something I threw together for Sunday dinner, adapted from my more elaborate barbecue sauce, the one that includes Worcestershire sauce and liquid smoke. Anyway, each has its time and place. For this barbecue sauce, you only need basic ingredients you are likely to already have in your kitchen, but the taste belies its simplicity.
To make fried barbecued turkey wing
1 1/2kg turkey 3 tablespoons chopped onions 3 teaspoons curry powder 3 teaspoons dry thyme 3 seasoning cubes 2 teaspoons dry chili pepper 2 teaspoons garlic powder 1 teaspoon ginger powder 2 teaspoons salt Vegetable oil for deep frying
1/2 cup ketchup 1 teaspoon sugar 1 teaspoon soy sauce* 1/4 teaspoon molasses, honey or brown sugar 1 teaspoon dry chili pepper
*I use dark soy sauce
Cut turkey wings to desired size, wash and put in a pot. Add onions, curry powder, thyme, seasoning cubes, pepper, garlic powder, ginger powder and salt. Stir and place over medium heat.
Cover and cook till turkey is tender. It should cook in its own juice, add a little water if it is drying up.
Heat up oil for deep frying, add turkey and fry till browned.
Drain on kitchen napkins.
Rub oil on a baking sheet or line with aluminium foil. Preheat oven to 180 deg C.
In a bowl mix ketchup, sugar, soy sauce, molasses and chili pepper till well blended.
Brush turkey liberally with barbecue sauce and place on the greased baking sheet.
Place in the oven for 15 minutes. Take out and serve.
